These little babies are just so much fun. If your little one has a gluten intolerance then you can substitute the flour for non glutenous flour or use a recipe that works for you and them.
The fun is really in the icing and decorating.
115 g butter, melted
2 large ripe bananas
1 large egg
1/3 c milk
1 tsp vanilla essence
11/2 c plain flour
2/3 c caster sugar
1/4 tsp salt
2 tsp baking powder
1/2 tsp baking soda
1/2 c butter, softened
2 c icing sugar
2 tbsp milk
25 g dark chocolate
75 g milk chocolate
Preheat oven to 180 degrees. Line muffin tins with patty pans.
Add the banana to the melted butter. Mash together.
Add the egg, milk and vanilla and whisk to combine.
Combine all the dry ingredients.
Add to the wet mixture and fold together.
Spoon mixture into pans, 3/4 full.
Bake for 25-30 minutes.
Allow to cool on a wire rack before icing.
To make the icing beat the butter and sugar until pale and creamy. Stir though the milk. Then the chocolate. If too runny add more icing sugar.
Pour into a piping bag. Ice.
