Spaghetti with Ham and Black Pepper

Oh Christmas how I love thee. Of course its all about spending time with family and giving back, but really for me its all about the food.
Hot glazed ham is our Christmas day thing. The best part is the following days where ham in on the menu 24/7. I know there are lots of people out there who have the same tradition.

Here is a quick and easy recipe for those struggling to use up that ham. This recipe is perfect with chicken also. Feel free to use whatever pasta you have knocking back in the cupboard.
This will feed 4.


3 garlic cloves, finely chopped
3 tsp seeded mustard
Ham, as much or as little as you like, roughly chopped
1½  large carrot, grated
350 ml cream
½ c italian parsley
400 g Pasta

Bring a large pot with hot water to the boil. Generously salt.

Heat a few tbsp oil in a large fry pan over a very low heat. Add the garlic and mustard and cook until the garlic is soft.
Bring heat up to a medium temperature. Add the ham, carrot and ¼ c parsley. Cook for 1 minute.
Pour in cream. Bring sauce to a gentle simmer and stir occasionally. Season with salt and pepper. Be careful not to add too much salt as the ham is also quite salty.

Cook the pasta according to packet instructions.

While the pasta is cooking your sauce will thicken and reduce. If you think it is ready remove from the heat and let it rest.
Once the pasta in cooked, strain and toss through the sauce.

Serve with extra cracked pepper and the remaining parsley.
